October 18, 2009 Sunday “Brunch and Bubbles” at Opus Restaurant

If an opus is a set of compositions by a particular composer, then Chef Michael Long is the maestro at Littleton’s Opus Restaurant. As Executive Chef and Proprietor, Long has created an innovative fine dining experience best described as a culinary symphony.

A hallmark of Opus’ cuisine is the playful and deliberate mix of ingredients and textures – a thoughtful combination of five or six different flavors complementing the featured element. Presentation and composition highlight the technical precision and variety of cooking methods used, creating an artfully-arranged plate.

Can you really tell the difference between a $30 bottle of wine and a $100 bottle?

bottles of wine without labels

This is defiantly not a simple “yes” or “no” answer since the preference of one wine over another is subjective to each individual.  Of course the level of knowledge an individual may have regarding wine certainly makes a difference. Those who know a thing or two about wine will be more particular about what they are drinking and better at detecting the nuances of the different styles and qualities of wine.  There are a few tricks of the trade when producing inexpensive (typically below the $20 range) wines to mask imperfections such as adding grape juice that has not fermented to sweeten the batch or to dollop a little acidity to balance too much sugar that a wine novice probably wouldn’t notice.

At first one might be inclined to say “yes, you should be able to tell the difference between the two because of the price difference” and in most cases you will.  However the truth is that Continue reading

How much time should I allow to chill a wine?

wine_by_glassFor white wines 1 ½ hour is good and typically remove them about 15 minutes prior to serving.  On the other hand red wines don’t require that much time to chill.  You’ll want to basically put them in the refrigerator right around the time you’re pulling out the white.

And remember you’re always better off serving a wine on the colder side since it’s much easier to bring it up in temperature as opposed to chilling a wine down that’s been served too warm.

Forgot to chill your wine? There’s nothing to fret about – the quickest way to chill down a bottle of wine is to immerse it in a bucket (or kitchen sink) of ice water.  Yes this is more efficient than sticking it into the freezer because the ice water covers more of the bottle’s surface area thus chilling the wine quicker.
